Know what to expect before you reserve.
Bulk beef is different from buying one package at the store. These answers explain the weights, costs, cut choices, and timing that matter most.
01What does hanging weight mean?
Hanging weight is the carcass weight after slaughter and before aging, trimming, cutting, and packaging. It is the weight used to calculate the beef price. Your packaged take-home weight will be lower because moisture, trim, bone, and the cuts you choose affect the final yield.
02How much freezer space should I plan for?
Freezer needs vary with the animal and your cut choices. As a planning guide, many households allow roughly 5–7 cubic feet for a quarter and 8–10 cubic feet for a half. A whole beef generally needs a large chest freezer or more than one freezer. We recommend leaving extra room rather than measuring too tightly.
03Is a quarter a front or hind quarter?
A quarter is intended to be a balanced share from a side, not simply the front or hind. Because a side must be divided fairly, some quarter-beef cut choices may need to match the paired customer.
04Can I choose my cuts?
Yes. Once your deposit is verified, IJ Ranch issues a random private access number. That number and the matching order email open the private cut menu. You can choose steak thickness, package counts, roast size, ground beef packages, premium cuts, everyday cuts, and special instructions. We review choices that depend on share size or butcher availability.
05Why are extras only offered with a whole beef?
Items such as the heart, tongue, oxtail, liver, kidneys, specialty steaks, soup bones, marrow bones, and suet exist in limited quantities on one animal. They cannot always be divided fairly among quarter or half shares, so the extras menu is reserved for a whole-beef customer.
06What does the beef price include?
The agreed price per pound covers the beef and is calculated from hanging weight. Butcher, cutting, wrapping, processing, specialty items, and related charges are separate and are added to the final statement.
07How do deposits work?
Your deposit reserves an order and is credited against your final beef total. Deposits are non-refundable. With written IJ Ranch approval, a deposit may be transferred to another eligible IJ Ranch order or customer.
08When do I receive the cut sheet?
After IJ Ranch verifies your deposit, we issue a random private access number. Use it with the email on your order to enter the cut menu. When you submit the sheet, a letter-size butcher PDF is saved privately for both you and IJ Ranch.
09Can I choose grass-finished or grain-finished?
Yes. You can state your preference when ordering. We match it to cattle and butcher bookings that are available for your target timing. If no matching stock is posted, the order alerts us that another animal or booking is needed.
10How is the beef raised and processed?
We do not use added growth hormones or mRNA vaccines. Antibiotics are used only when required for animal care, followed by at least twice the required withdrawal period before slaughter. Beef is processed through provincially inspected butcher shops in Alberta or Saskatchewan.
11How is the beef aged and packaged?
Beef is aged for a minimum of 14 days, wrapped in butcher paper, frozen, and prepared for pickup. Your cut sheet records the package sizes that make sense for your household.
12How is the final balance calculated?
After processing, IJ Ranch enters the whole animal’s rail weight. The system applies your share—quarter, half, or whole—multiplies your customer hanging weight by the agreed price per pound, adds your butcher and other approved charges, then credits your deposit.
13Where do I pick up my beef?
Pickup details depend on the butcher booking and your order. We confirm the location, date, and pickup window personally. Beef is supplied frozen, so bring enough coolers or freezer-ready containers for the trip home.
14How does the Ground Beef Club work?
Choose a monthly amount of premium, pasture-raised lean ground beef in 1 lb or 2 lb packages at $10.00 per pound. This is fresh beef raised for our customers—not old or end-of-life cattle. Secure automatic billing occurs on the first of each month once availability and payment setup are confirmed. Edmonton pickup is the Second Friday of each month, and Saskatoon pickup is the Fourth Friday of each month.
15Can I pause or cancel the Ground Beef Club?
Yes. Written notice must reach ranch@ironjet.ca 30 days before the next billing date. Changes requested later apply to the following billing cycle.
16When am I charged for the Ground Beef Club?
Your card is securely saved through Stripe when you join. The first automatic charge is scheduled for the next eligible first of the month, and future charges occur on the first of each month while your membership is active.
17What if I miss my Ground Beef Club pickup?
You may collect the order the following month or arrange a city drop in Edmonton or Saskatoon for $25.00. Door delivery within either city is $25.00.
